Sie wird aus frischem Schweinefleisch hergestellt, traditionell wird auch Rindfleisch, gelegentlich sogar Kalbfleisch verwendet. Sie wird meist in Rinderkranzdärme gefüllt. Der typische und unverwechselbare Wurstkringel mach sie zum Synonym für die Wurst schlechthin. Fleischwurst kann kalt oder warm verzehrt werden.

Zutaten: 45 % Schweineschulter, 32 % Schinkenfett, 20 % Eisschnee, 3 % mageres Rindfleisch. Würzung: Weißer gemahlener Pfeffer, Mazis, Koriander, Ingwer. Weitere Zutaten: Pökelsalz (Speisesalz, Konservierungsstoff: E 250) ggf. Buchenrauch, Zusatzstoffe

Tipps für die Lagerung & Haltbarkeit:

Um den vollen Geschmack und das feine Aroma zu erhalten, sollte Fleischwurst kalkt gelagert und möglichst frisch verzehrt werden. In Scheiben geschnitten ist Brühwurst. Im Kühlschrank in der Regel bei +5 °C für 3 – 5 Tage haltbar. Ganze Stücke können bei +5 °C ca. 5 – 7 Tage, bei +7 °C ca. 4 Tagegelagert werden. Austrocknen und Aromaverlust wird durch Verpacken, Abdecken oder Aufbewahren in Frischhalteboxen vermieden.
